  • 1 cup canned pumpkin, , not pumpkin pie filling
  • 1 teaspoon baking soda
  • 1/2 teaspoon gluten-free baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 1/2 cups gluten-free all-purpose flour flour
  • 1/4 teaspoon xanthan gum, , leave out if your flour already has it in it
  • 1 teaspoon cinnamon
  • 1 tablespoon pumpkin pie spice
