{"id":223,"date":"2023-12-05T03:49:41","date_gmt":"2023-12-05T03:49:41","guid":{"rendered":"https:\/\/recipes2.thecreativepage.com\/wordpress\/?page_id=223"},"modified":"2023-12-07T21:16:31","modified_gmt":"2023-12-07T21:16:31","slug":"coffee-cake-2","status":"publish","type":"page","link":"https:\/\/recipes2.thecreativepage.com\/wordpress\/breads-muffins\/coffee-cake-2\/","title":{"rendered":"Coffee Cake"},"content":{"rendered":"\n<p><strong>Makes 2 Cakes<\/strong><br>&#8211; \u00bd cup unsalted butter softened (113g)<br>&#8211; 8 oz cream cheese softened (225g)<br>&#8211; 1 cup light brown sugar tightly packed (200g)<br>&#8211; \u00bd cup granulated sugar (100g)<br>&#8211; 2 large eggs<br>&#8211; 1 \u00bd teaspoon vanilla extract<br>&#8211; 2 \u00bd cups all-purpose flour (335g)<br>&#8211; 2 teaspoons baking powder<br>&#8211; 1 teaspoon cornstarch<br>&#8211; \u00bd teaspoon salt<br>&#8211; \u00bd cup buttermilk (120ml)<\/p>\n\n\n\n<p><strong>Cinnamon Swirl<\/strong><br>&#8211; \u00bc cup sugar (50g)<br>&#8211; 1 \u00bd teaspoon cinnamon<\/p>\n\n\n\n<p><strong>Topping<\/strong><br>&#8211; 1 \u2153 cup all-purpose flour (175g)<br>&#8211; 1 cup + 2 Tbsp brown sugar packed (225g)<br>&#8211; 3 Tablespoons granulated sugar<br>&#8211; 4 \u00bd teaspoons ground cinnamon<br>&#8211; \u00bc teaspoon salt<br>&#8211; 10 Tablespoons unsalted butter melted (140g)<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Preheat oven to 350F and lightly grease and flour a 13\u00d79 baking pan.<\/li>\n\n\n\n<li>In stand mixer, or using an electric mixer in large bowl, cream together butter and cream cheese.<\/li>\n\n\n\n<li>Beat in sugars until light and fluffy.<\/li>\n\n\n\n<li>Add eggs, one at a time, beating until combined. Scrape down sides and bottom of mixing bowl with rubber spatula.<\/li>\n\n\n\n<li>Stir in vanilla extract.<\/li>\n\n\n\n<li>In a separate, medium-sized bowl, whisk together flour, baking powder, cornstarch and salt.<\/li>\n\n\n\n<li>Gradually add flour mixture to wet ingredients, alternating with buttermilk, until all of the flour mixture and buttermilk have been combined.<\/li>\n\n\n\n<li>Spread about half of the batter into prepared pan (batter will be thick).<\/li>\n\n\n\n<li>Quickly whisk together sugar and cinnamon for cinnamon ripple layer in a small bowl and sprinkle it evenly over the batter.<\/li>\n\n\n\n<li>Dollop remaining batter over the cinnamon sugar layer and use a knife to spread evenly overtop. If it gives you a tough time\/doesn&#8217;t want to spread, just try your best but don&#8217;t stress! If it&#8217;s easier, just swirl the cinnamon\/sugar in with a knife.
