{"id":216,"date":"2023-11-17T23:20:46","date_gmt":"2023-11-17T23:20:46","guid":{"rendered":"https:\/\/recipes2.thecreativepage.com\/wordpress\/?page_id=216"},"modified":"2023-11-17T23:23:06","modified_gmt":"2023-11-17T23:23:06","slug":"carrot-cupcakes","status":"publish","type":"page","link":"https:\/\/recipes2.thecreativepage.com\/wordpress\/cupcakes\/carrot-cupcakes\/","title":{"rendered":"Carrot Cupcakes"},"content":{"rendered":"\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 \u00bc cups all-purpose flour (157g)<\/li>\n\n\n\n<li>\u00bd cup granulated sugar (100g)<\/li>\n\n\n\n<li>\u00bd cup light brown sugar packed (100g)<\/li>\n\n\n\n<li>\u00be teaspoon baking soda<\/li>\n\n\n\n<li>\u00bd teaspoon baking powder<\/li>\n\n\n\n<li>\u00bd teaspoon salt<\/li>\n\n\n\n<li>1 teaspoon cinnamon<\/li>\n\n\n\n<li>\u00bc teaspoon nutmeg<\/li>\n\n\n\n<li>\u00be cups canola oil (180ml)<\/li>\n\n\n\n<li>2 large eggs room temperature<\/li>\n\n\n\n<li>1 \u00bd teaspoons vanilla extract<\/li>\n\n\n\n<li>2 Tablespoons milk<\/li>\n\n\n\n<li>1 \u00bd cups grated carrots (170g)<\/li>\n\n\n\n<li>\u00bd cup chopped walnuts or pecans, optional (60g)<\/li>\n\n\n\n<li>1 batch Cream Cheese Frosting<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Preheat oven to 350F (175C) and line a 12-count muffin pans with paper liners.<\/li>\n\n\n\n<li>In the bowl of a stand mixer (or in a large bowl using an electric mixer), whisk together flour, sugars, baking powder, baking soda, salt, cinnamon and nutmeg.<\/li>\n\n\n\n<li>Stir in canola oil. Add eggs, one at a time, pausing to scrape down sides of the bowl after each addition. Beat until well-combined.<\/li>\n\n\n\n<li>Stir in vanilla extract and milk.<\/li>\n\n\n\n<li>Add carrots and nuts (if using). and stir until combined.<\/li>\n\n\n\n<li>Evenly divide batter into cupcake liners, filling each \u2154-\u00be of the way full.
