{"id":131,"date":"2023-11-09T23:35:55","date_gmt":"2023-11-09T23:35:55","guid":{"rendered":"https:\/\/recipes2.thecreativepage.com\/wordpress\/?page_id=131"},"modified":"2023-12-07T23:03:06","modified_gmt":"2023-12-07T23:03:06","slug":"red-velvet-cake","status":"publish","type":"page","link":"https:\/\/recipes2.thecreativepage.com\/wordpress\/cakes\/red-velvet-cake\/","title":{"rendered":"Red Velvet Cake"},"content":{"rendered":"<p><strong>DRY INGREDIENTS<\/strong><br \/>\n&#8211; 1 1\/3 cups cake flour (sub plain \/ all purpose flour, Note 1)<br \/>\n&#8211; 1 tbsp cocoa powder , unsweetened (Note 2)<br \/>\n&#8211; 1 1\/2 tsp baking powder (not baking soda, Note 3)<br \/>\n&#8211; Pinch of salt<\/p>\n<p><strong>WET INGREDIENTS<\/strong><br \/>\n&#8211; 4 tbsp unsalted butter , softened (Note 4)<br \/>\n&#8211; 2\/3 cup caster sugar (superfine sugar)<br \/>\n&#8211; 2 large eggs , at room temperature (Note 5)<br \/>\n&#8211; 1\/3 cup vegetable oil (or canola)<br \/>\n&#8211; 1\/2 cup buttermilk , at room temperature (Note 6)<br \/>\n&#8211; 1 tsp vanilla extract<br \/>\n&#8211; 1\/2 tsp white vinegar (Note 7)<br \/>\n&#8211; 1 tbsp red food colouring (yes, 1 whole tablespoon!)<\/p>\n<p><strong>CUPCAKE METHOD<\/strong><\/p>\n<ol>\n<li>Preheat oven to 180\u00b0C\/350\u00b0F (160\u00b0C fan). Line a standard 12 hole muffin tin with cupcake liners.<\/li>\n<li>Sift Dry ingredients together into a bowl.<\/li>\n<li><strong>Cream butter:<\/strong> Put the butter in a separate bowl and beat on speed 2 for 1 minute with an electric mixer or stand mixer (paddle attachment).<\/li>\n<li><strong>Cream sugar:<\/strong> Add sugar then beat for a further 2 minutes, same speed, until the butter is very pale yellow, almost white.<\/li>\n<li><strong>Beat in eggs:<\/strong> Add the eggs one at a time beating for 30 seconds on speed 1 after each addition.<\/li>\n<li><strong>Add remaining Wet ingredients:<\/strong> Add oil, buttermilk, vanilla and red food colouring then beat on Speed 1 until incorporated and the batter is smooth.<\/li>\n<li><strong>Beat in flour:<\/strong> Sprinkle the Dry ingredients across the surface and mix on Speed 1 for just 20 seconds. Scrape down sides of the bowl, then mix again for 10 seconds. The batter should now be smooth \u2013 few small lumps is ok.
