- 1.5 Cups Bread Flour
- 1/4 to 1/2 Cup Warm Water (100 degrees)
- 1 teaspoon Salt
- 1 teaspoon Sugar
- 1 teaspoon Instant Yeast
- 1 Tablespoon Olive Oil
Make the dough by mixing all ingredients above. Knead the dough for several minutes. Place in a bowl and cover with plastic wrap. Allow to rise for 30 minutes, then stretch and fold 6 times. Cover again and allow to rise for 30 minutes, then stretch and fold 6 times. Cover again and allow to rise for 30 minutes, then stretch and fold 6 times. Cover again and allow to rise for 90 minutes. Take out the dough and place in a cast iron skillet. Cover again and allow to rise in a cold oven with the light on for another 90 minutes. Take off plastic wrap and poke holes into the crust with your fingers.
Bake in a 500 degree oven for 15 minutes. Remove and cover with cheese, then sauce and toppings of your choice. Bake again at 500 degrees for 10 minutes and then place under the broiler for 3 minutes.
Remove and add small spoonful’s of Ricotta Cheese, sprinkle fresh Parmesan and fresh chopped Parsley. Enjoy!
